It’s starting to feel a lot like Christmas at Robin Pope Safaris’ Kuthengo Camp in Liwonde National Park!
Having joined the Robin Pope Safaris’ family in Malawi this year, Kuthengo Camp is celebrating its first Christmas amidst the beautiful scenery of Liwonde National Park. The camp’s chef, Dickson, and guide, Stanley, have been hard at work spreading the festive cheer around. Here is a short Q & A session with them:
Chef Dickson, what’s on the menu for Christmas Dinner?
Starter: Cream of mushroom soup with croutons.
Mains: Roast gammon and roast turkey with stuffing, Yorkshire pudding, roast potatoes, peas, carrots and sweetcorn as well as baked cauliflower cheese. Served with gravy.
Dessert: Ice cream loaf with custard jelly.
Tea: Pecan pie – remember Chef Dickson’s moreish pecan pie recipe?
Game drive: Mini mince Christmas pies.
Chef Dickson, what’s your all-time favourite Christmas dish to prepare?
I love cooking gammon and turkey for guests, and then being able to serve and carve in front of them is always a bonus!
Guide Stanley, why are you looking forward to Christmas this year?
Christmas will be extra special in Liwonde this year as Kuthengo Camp will have its first Christmas. Also, Liwonde is now a tourism hot-spot as more new wildlife has been and is being re-introduced, which I think makes Liwonde the best wildlife park in Malawi. It will be a special time for everyone at Kuthengo!
Guide Stanley, what was the best present you received at Christmas?
My favourite present was a safari travel bag, which was hand sewn in the traditional Masai way, presented to me by my former employer in 2012.
